I always feel like cranberries don’t get enough love when it comes to desserts, so this year I wanted to come up with a recipe where they were really the star of the show. So I whipped up some cranberry curd and paired it with a shortbread crust, for a simple, yet stunning tart. I topped it with a few sugared cranberries, rosemary, and meringues. Whipped cream would also be a great option if you don’t want to fuss with meringues! You can always use a star tip to pipe on whipped cream to make it look even fancier.

Oh hello friends! Today’s post is extra special, as I spent a Saturday baking up a storm with Kristie from The Sweet and Simple kitchen! strawberry rhubarb tart

Helloooo Summer tart!  Sweet strawberries, tart rhubarb, and the butteriest short bread crust come together in a heavenly combo to make your tastebuds so so happy.  It's a melt in your mouth crust with a sweet tart curd filling.  Definitely recommend!

And yes, if it isn't 100% obvious by now, strawberry rhubarb continues to be my ultimate favourite flavour combo.

rosemary shortbread

To be honest this flavour combo might freak some people out since rosemary is often paired more with savoury dishes.  All I can say is...be brave!  It might take a couple of cookies before they start to grow on you, but trust me and give them a go!  The shortbread just melts in your mouth (thank you butter!), and the rosemary gives it such an interesting piney flavour.

(Christmas) shortbread cookies

It's that time of year again where our house is filled with Christmas baking, our Christmas tree is standing proudly in our living room, and lights are strung up everywhere. I love how cozy our home feels, and now if it would just snow on Christmas eve that would be perfect.  (It's snowed once here this year, halfheartedly, and then the weather remembered we're not like the rest of Canada and jumped back up to 15 degrees.  Booya!)
